There is always red wine left over after the mains so this is why I follow the French system and serve cheese at this point. Just make sure it is a harder cheese that will suit a red.
If you have a soft cheese then it is critical you serve it with a stronger bread which may help it taste better with a red.
Comte is our favourite cheese for reds; in fact it is THE favourite cheese choice of lots of our friends.
For the special occasion of Christmas in July try and get the 18 months aged Compte - it's nuttier and so moorish (a little like Steve).
Substitute Australian Maffra cheddar if you cannot access Comte. Maffra is a very fine cheddar.
